5 Ingredient Mushroom Patê
Ingredients:
32 brown mushrooms
1 medium white onion
10 garlic cloves
1 Clearspring organic japanese brown rice miso soup paste sachet, or 2 tablespoons of dark miso paste
1 tbsp tahini
Method:
Heat a tablespoon of olive oil in a non stick pan, finely slice onions and sauté them in the pan with some salt, till caramelised (if you do not have olive oil, just spray some water on the pan). Add all the mushrooms (sliced), the garlic (finely sliced), and the miso paste. Place a lid on the pan, and allow the mushrooms to become completely soft, stirring occasionally.
Once the mushrooms are all soft, remove the lid and allow all the liquid to evaporate, stirring occasionally.
Blend it all, with one tbsp of tahini added. If the pate is too moist, add it back to the pan allowing some more liquid to evaporate. Place it in a jar and serve it with crackers and fresh herbs (delicious paired with fresh basil).
