Creamy Broccoli Soup
Serves: 5 / Cooking time: 30mins
Ingredients:
2 broccolis
9 tenderstem broccolis
1 white onion
5 garlic cloves
Olive oil
Fennel seeds (tsp)
Tsp onion powder
1 cup vegetable stock
1/2 cup plant milk
5 Tbsp vegan yogurt (plain)
Black sesame seed (optional for presentation)
Method:
Wash all the broccoli. Cut the broccoli stalk and the onion into about 1 cm cubes. Sprinkle some olive oil on a non stick pan, add the onion and some salt. Let it cook down till translucent, add the broccoli stalk, onion powder and the fennel seeds. Sprinkle with some more salt, and let it cook till tender. Add the broccoli heads, and place the lid on. Once the mixture starts sticking to the bottom, add 1 cup of vegetable stock, the garlic (minced) and 1/2 cup of plant milk (I used soya). Let it cook till the broccoli heads are soft.
Transfer to a high speed blender, and blend it well till smooth. Serve it with a tablespoon of vegan yogurt and some sesame seeds.
