Vegan Fig Feta Salad
Ingredients:
Balsamic Glaze:
3 drops of vanilla stevia drops
5 tbsp Balsamic Vinegar
1 tbsp Maple Syrup
Rocket
1 Fig
1/4 Avocado
Handful of Almonds
Juice of half a lime
Method:
Salt the almonds and roast them in the oven at 180˚C till golden.
Add the balsamic vinegar, maple syrup and stevia drops to a small sauce pan on low heat, and allow it to cook till it becomes sticky and thick.
Add the rocket to a plate, sprinkle it with salt, pepper, and lime juice. Top it with avocado, fig, feta cheese and chopped roasted almonds. Pour the Balsamic Glaze just before serving.
