Peanut Chilli Noodle Salad

Serves 2 | Cooking time: 20 minutes

Ingredients: 

  • 1/3 Cucumber

  • 1 Spring onion

  • Sesame seeds

  • 2 tbsp Peanut butter

  • Noodles (Use how much you'd like)

  • 2 Carrots

  • 1/2 tsp Chilli powder

  • 1 tsp miso paste

  • 1 tsp maple syrup

  • Handful of Roasted Peanuts

  • Parsley for presentation

Method:

  1. Preheat the oven to 180 degrees.

  2. Roast the peanuts till lightly fragrant and golden. Remove the skin once they’ve cooled and sprinkle with salt.

  3. Bring a pot of water to the boil.

  4. Add noodles, and lower the heat. 

  5. Cut carrots, spring onions, parsley and cucumber lengthwise.

  6. Make the peanut sauce by combining chilli, peanut butter, miso, maple syrup, lime juice and some water. Make sure to taste as you go and adjust amounts to your taste.

  7. Drain the noodles and combine it all together

  8. Top it with finely chopped parsley and roasted peanuts (or any other roasted nut).
