Easy Crunchy Granola
Ingredients:
Optional:
Coconut oil
Nut butter
Nuts and seeds
Spices (cardamon, pumpkin etc)
Chocolate chips
Organic oats
Maple syrup
Cinnamon
Raw cacao
Dried fruit
Vanilla extract
Method:
This is a wonderful recipe, because it is completely customisable to what you have at home. You can make it gluten free or nut free if you need. Add any dried fruits you have lying around, any nuts and nut butters, seeds, spices and chocolate chips.
Preheat the oven to 180C˚. Add the maple syrup, nut/seed butter, vanilla extract, coconut oil, cinnamon, and a sprinkle of salt to the base of a large bowl. Whisk until evenly incorporated. Pour the oats, seeds and nuts. Mix it all till incorporated. Transfer this mixture to a greased or lined baking tray and press it into a thin, even layer.
Bake for 20 minutes, flip the mixture, and bake for an additional 6-7 minutes, then remove.
Sprinkle the dried fruit and/or chocolate chips over the granola, using a spatula to gently toss the mixture. If you’d like the chips to completely melt, stir them a bit more until they melt completely.
Let the granola and chocolate cool completely on the tray before placing in a jar.
Keep it in the fridge for extra crunchiness.
