Purple Cauliflower Starter

Ingredients:

  • 1/3 Purple Cauliflower

  • Olive oil

  • 3 mushrooms

  • Juice of 1/2 a lime

  • 1 tsp tamari soy sauce

  • 1/2 tbsp Tahini

  • 1/4 tsp onion powder

  • Sesame seeds for garnish

Method:

Cut and wash your cauliflower florets. Drizzle them with olive oil and salt, and roast at 180˚C till fork tender, flipping once.

Cut your mushrooms, and add to a pan drizzled with olive oi. Cover the pan with a lid, and allow the mushrooms to get soft and juicy (stirring now and again so they don’t stick to the bottom). Remove the lid and allow the water to evaporate. Add the tamari and sauté for a little longer.

Mix the tahini, lime juice, onion powder and a little bit of water. Salt this sauce to taste.

Spread the sauce on a dark plate, and top it with the mushrooms and then the cauliflower. Garnish wit sesame seeds, and ENJOY!
