Tart Half Moon Pudding
Ingredients:
5 small plums
5 drops of vanilla stevia
1 tbsp desiccated coconut
2 tbsp agave syrup
1 tbsp agar agar
Sauce:
1 tbsp smooth peanut butter
1 tbsp agave syrup
1 tbsp soy milk
1/4 tsp vanilla extract
Method:
Blend the plums with the stevia drops in a high speed blender. Add them to a saucepan with 1 tbsp of desiccated coconut, 2 tbsp of agave syrup and cook on low heat for 10 minutes (constantly stirring).
Add 1/2 tbsp agar agar, and stir continuously for 5 minutes with a whisk. Pour the mixture into a silicon mould and leave it in the freezer.
To make the sauce mix 1 tbsp of peanut butter with soy milk, agave and vanilla extract. Spoon the mixture into a plate, and once the plum pudding is set, plate it on top of the sauce, topping it with some desiccated coconut and optional freeze dried raspberries.
