Vegan Rocky Road

Ingredients:

  • 1 and a half bars of 70% dark chocolate

  • Agave syrup

  • Roasted peanuts

  • Crunchy peanut Butter

  • 3 salted rice cakes

  • Dates

  • Freeze dried raspberries (optional)

Method:

Add water to a sauce pan and place a heat resistant bowl on top so it is resting on the edges of the pan, but not touching the water. Heat water on low. Put chopped chocolate in the bowl, stir often, and watch it melt. Remove bowl from the heat once the chocolate is melted to prevent burning. Crunch the rice cakes in your hands and add them to the chocolate. Chop the dates roughly and add them to the mixture, with the roasted peanuts and the freeze dried raspberries. (You can add whatever dried fruits or nuts you have lying around. Get creative!)

Add agave syrup to your taste, depending on how sweet you want them. Stir the mixture until everything is completely covered.

Tip the mixture into a lined baking tin, and spread it out to the corners. Chill for at least 2 hrs and cut into bars.
